Coconut Acai Bowl
Acai bowls are obviously all the rage all over the world, from Austin to Australia, from California to Costa Rica. They're everywhere!
Admittedly, I've never had one from anywhere besides my own kitchen, but that makes it even better. They are incredibly simple and delicious to make!
You can find prepared Acai packets in the frozen fruit section of most health food stores, and I encourage you to experiment! I used this:
For the bowl:
1 Acai frozen packet
1/2 frozen banana
1 handful (approximately 1/2 cup) organic frozen blueberries
1 handful spinach
1 cup coconut water
2 tbsp yogurt or coconut yogurt
optional:
juice from 1/2 lemon or lime
cinnamon
Throw all of this in your blender. I use a magic bullet with a single serving blade and cup, which makes it SO easy. They're around $30-$70 and it's so worth it.
Once this has blended completely smooth, pour it in your bowl and stick in the freezer while you prepare your toppings!
Toppings:
1-2 tbsp raw nut butter (I used almond)
1/2 sliced banana
1 tsp chia seeds
2 tbsp raw flaked coconut
1 tbsp cacao nibs
Get creative! Add whatever you want! Enjoy for breakfast, a snack, or dessert!
