Cucumber & Watermelon Salad with Mint | Vibrant MONQ

Have you been dragging through this week, just waiting for Friday? I totally get that sometimes, and this week I actually started a new part-time job, which has been stressful but fun. I don't think I would've felt as spicy and mindful of the whole experience if not for some MONQs in my bag to keep me sane!

This week, I'm highlighting each MONQ with a specific and unique recipe designed to not only compliment the specific flavors of the individual diffuser, but also with ingredients that promote similar health benefits. 

VIBRANT MONQ

++ Essential oil blend: lemon, ginger, and Spearmint

Seriously, nothing is more energizing and vibrant than the flavor of watermelon! When I'm thirsty, and needing something to not only quench my thirst, but also make me feel like I can thrive, I crave melon. Rich in vitamins, minerals, and water content to help hydrate, melon is one of those things that can only make you feel better in any given scenario. When it comes to food combining, melon is believed to be best absorbed and processed by the body when it's eaten alone, so this recipe is fairly simple.

Cucumber & Watermelon Salad with Mint

RECIPE

Serves: 1  ||  Time: 10 min

  • 1 Cup cubed watermelon
  • 1/2 sliced large cucumber
  • 2 tbsp shredded coconut
  • 1 tbsp chia seeds
  • juice of one lime
  • 1/2 tbsp honey or maple syrup
  • dash of coarse sea salt
  • 2 mint leaves (fresh and diced)
  1. Combine all salad ingredients in a large salad bowl and mix thoroughly 
  2. Enjoy that day! If saved, it doesn't taste as fresh!

PERFECT FOR A MID-MORNING SNACK!
