Coconut Chia Crunch Granola!

I've had tons of granola in my life.

It went from being a health food, to being a "no-no" food, to being a "high-carb" food, to just being off limits entirely unless it was completely only nuts and seeds without anything yummy on it. ​

Personally, I don't see anything wrong with organic and gluten-free whole grains. 

In fact, I find them extremely delicious and wholesome! Not to mention filling and energizing. ​

This granola has no refined sugar or oils and is completely vegan and gluten free!

You can mix it in coconut (or dairy) yogurt, cereal, put it stop your smoothies, and your salads! It's crunchy and perfect. ​

Ingredients:​

​dry:​

3 cups organic rolled oats ​

1 cup organic raw buckwheat groats

1 cup flaked coconut ​

3/4 mixed dried fruit (I used Organic jumbo raisins​)

1/2 cup cacao nibs​

1/4 cup chia seeds​

1/4 cup flax seeds​

1/2 cup slivered almonds​

1/3 cup Raw pumpkin seeds​

2 tsp ground cinnamon​

1 tsp ground ginger​

1 tsp salt​

Wet ingredients:

1/4 cup organic raw coconut nectar (you can find this at a health store, but you could use honey or coconut sugar or maybe even maple syrup here)​

2 tbsp coconut oil​

1/4 cup canned light coconut milk​

Directions:​

-Preheat oven to 375 degrees. ​

-Line two cookie sheets with parchment paper. ​

-Throw all those dry ingredients in a big mixing bowl. Don't be shy, do it!​

-In the meantime, melt the coconut oil in a small cup in the microwave (or if you already have liquified coconut oil, skip this step duh)​

-stir in the coconut milk to the melted coconut oil​  

-Pour the wet mixture over the dry and stir together. Yes. That's about all you're gonna do. ​

-​Divide the mixture onto the two prepped cookie sheets and SPREAD THE MIXTURE FLAT!

-Bake for fifteen minutes (or until you can smell it!) then take out the cookie sheets, toss the granola, and reverse the racks. (Just switch the positioning of the two cookie sheets in the oven)

-Bake for 10-15 more minutes (keep an eye on the coconut, once it's a nice crispy tan, you're DONE)​

-remove and turn off oven. Let coolCOMPLETELY  (approximately 30 minutes)​

-Once all is cooled, break apart granola into chunks (I like it chunky!) and place in your container or plastic bag! I froze half of mine because I can't eat like six cups of granola on my own. Lol!​

-Consume within the week to ensure freshness!​

AND YOU'RE DONE! How easy?! So easy. ​
